Description: Hey ya'll!!! Here I feature a tasty keto comfort food! This Keto Pepperoni and Cauliflower Casserole is not only DELICIOUS, but whips up in no time at all!! Making it a perfect go-to meal for when time is of the essence. I also prepared some roasted asparagus to accompany the casserole. See the recipes below!! #ketogenicdiet #ketorecipes #ketoentrees ------------------------------------------------------------------------------- Follow me on IG @kuttin_up_keto Business email: kutnupketo@gmail.com ------------------------------------------------------------------------------- Keto Pepperoni and Cauliflower Casserole (makes 4 servings): • 1 head cauliflower, chopped • 2 tablespoons butter • 4 tablespoons heavy whipping cream • 1 cup shredded mozzarella cheese, divided into 1/2 cups • 17-20 large slices of pepperoni • 1/4 cup chopped yellow onion • 1/4 teaspoon garlic powder • 1/4 teaspoon Italian seasoning • 1/4 teaspoon onion powder • 1/4 celery flakes • Salt and black pepper to taste INSTRUCTIONS: 1. Preheat oven to 375° F. Grease 8×8 baking dish with butter and set aside. 2. Place chopped cauliflower, butter, and heavy whipping cream into a large Microwave-safe bowl and cook for 10 minutes. 3. Stir cooked cauliflower and cook for an additional 5 minutes. 4. Remove cauliflower from Microwave and season with garlic powder, onion powder, Italian seasoning, onion salt and stir to blend well. 5. Add 8 to 10 slices of pepperoni to cauliflower and using a blender, puree mixture until well blended. Stir in chopped onion and mozzarella cheese. Taste and adjust seasonings to taste. Add to the bottom of greased baking dish. 6. Top pepperoni and cauliflower mixture with 1/2 cup cheese and remaining pepperoni slices. Sprinkle additional mozzarella cheese on top, if desired. Also add a sprinkle of Italian seasoning on top of cheese. 7. Bake for 15-20 min or until cheese gets slightly browned on top. 8. Remove from oven, let cool, and divide into 4 servings. Enjoy!! APPROXIMATE MACROS: 215 cal|16 g fat| 6 g Carbs|11 g protein ------------------------------------------------------------------------------- Oven Roasted Asparagus • 1 lb asparagus spears, bottoms trimmed • 2 tablespoons olive oil or oil of your choice • 2 teaspoons of grated parmesan cheese • Season to taste with salt, pepper, garlic powder, and onion powder. INSTRUCTIONS: 1. Preheat oven to 375° F. Line a cookie sheet with foil. 2. Drizzle oil over trimmed asparagus. Roll asparagus around on sheet to coat in oil. 3. Season to taste and bake for 12-15 minutes or until crisp-tender. 4. Remove from oven and sprinkle with grated parmesan cheese.
