Description: Hey ya'll! In this episode I feature yet another of my keto favorites -- Keto Broccoli and Cheddar Soup! This meatless entree is sure to become a family favorite for the non-keto folks in your house, too!! Pair with a keto-friendly side salad for an amazingly hearty and comforting meal! ------------------------------------------------------------------------------- Follow me on IG @kuttin_up_keto Business email: kutnupketo@gmail.com ------------------------------------------------------------------------------- Keto Broccoli And Cheddar Soup (6-8 servings): - 3-4 Broccoli Crowns - 1 tablespoon olive or avocado oil or ghee - 2 tablespoons almond flour - 2 tablespoons of chopped yellow onion - 3.5 cups of chicken broth - 1 cup heavy whipping cream - 4 cups shredded cheddar cheese (1 pack sharp cheddar, 1 pack medium cheddar) 1. Chop broccoli and coat in 2 tbsp of oil. Roast broccoli on 400 degrees for 15-20 min. 2. While broccoli is roasting, prepare soup mixture. 3. Saute onion in 1tbsp oil. 4. Add 2 tablespoons of almond flour and whisk, taking care not to burn. 5. Add 3.5 cups chicken broth (not reduced sodium type) 6. Add 1 cup heavy whipping cream 7. Bring to almost boil and season to taste with salt, pepper, garlic powder, onion powder, and celery flakes. 8. Add roasted broccoli to soup mixture and continue to cook until broccoli is tender. 9. Using either an immersion blender or potato masher, mash big bits of broccoli until they are very small. 10. Add cheese to hot soup and taste soup to see if more seasoning is needed. Make sure soup coats the back of a spoon, it will thicken as it cools but if it is too thick, add a little more chicken broth. If not thick enough, add more cheese to the soup.
