Description: Picture this. You're out in the desert camping and enjoying a relaxing morning around your campsite. As the noon hour approaches, your stomach begins to growl in anticipation of lunch. What are you going to eat? An energy bar? Freeze-dried food? A sandwich bought yesterday at a gas station? Yuck! Why not make some homemade tomato soup instead? It's easy! In this video, I'll show you how simple it is to make delicious homemade tomato soup while camping out in the desert using some basic ingredients and a propane stove. The complete recipe as demonstrated in the video is printed below. Enjoy! HOMEMADE TOMATO SOUP You will need: olive oil 1 yellow onion, small diced 3 cloves of fresh garlic, minced (or, if using pre-minced garlic, you'll need three teaspoons of that) 1 15-ounce can of crushed tomatoes red pepper flakes salt and pepper 3/4 cup of water 2 tablespoons creme fraiche 1) In a medium saucepan, heat a drizzle of olive oil over medium heat until it gets hot. 2) Add the diced onion and minced garlic to the hot oil. Stir and cook for about two to three minutes or until the onion is softened and fragrant. 3) Add the can of crushed tomatoes and the 3/4 cup of water to the onions and garlic. Then add as much of the red pepper flakes as you like (go sparingly because the red pepper flakes add a lot of heat to the soup!). Then add a little bit of salt and pepper to taste. Stir everything together and let it cook for about 8 to 9 minutes or until the soup has reduced its volume by a fourth. Don't boil the soup! 4) Once the soup has cooked for about 8 or 9 minutes and has reduced by about a fourth, stir in two tablespoons of creme fraiche. If you don't have creme fraiche, you can substitute sour cream. Use creme fraiche for the best results, though.
