Form around 5cm discs, you want them quite thick, and cook over medium low heat. Around 5mins on each side. (Don't smash down!) Add filling of choice. 🌮Smashed beans 🌮 When I'm not in the mood for making refried beans I just smash em in a bowl with some ketchup, sriracha, salt, pepper, smoked paprika, cumin, a teeny tiny bit of cinnamon and some coriander or parsley. Chickpea Pancakes THE BASIC RECIPE — 1/2 cup chickpea flour (aka besan or garbanzo flour) 1/8 cup nutritional yeast 1/2 tbsp apple cider vinegar 1/4 tsp baking soda 1/4 tsp baking powder salt 1/2 cup water + a couple of tablespoons Whisk all ingredients with 1/2 cup of water. Add a couple of extra tbsp of water if it’s looking a little dry. I like mine just a tad runnier than a regular pancake batter but you can play around with consistency! 💘 This makes 3-4 medium pancakes 💘 THE TRICK — Let your batter rest for at least 10mins (an hour would be ideal but not essential) Cook in a well oiled pan (best if you have a non stick) Cook on med-low heat. 🍜SOBA NOODLES WITH CREAMY TAHINI SAUCE (2-3 portions)🍜 For the Sauce 3 tbsp tahini 2 tbsp soy sauce 2 tbsp nutritional yeast 1 tbsp maple syrup 1 tbsp sesame oil 1/2 tbsp apple cider vinegar Juice of 1 lime or lemon Mix all together adding water as needed (1 used around 1/4 - 1/3 cup of water) I then cooked veggies in sesame oil and tamari and tossed all of it together with 1/2 of the sauce. The other half I kept aside. Sprinkle with chili flakes, sesame seeds and maldon salt.
