Artichoke Recipe Ingredients: 1 package (8oz.) frozen artichoke hearts, keep frozen 2 cloves garlic, minced 1 organic lemon, zested 2 - 3 tsp. Lemon juice 3-4 basil leaves, chopped (chiffonade) Salt to taste ⅓ cup crumbled feta cheese 2 tsp. Olive oil Directions: Begin by mincing the garlic so that it is ready to go. Then heat a frying pan over medium heat and add the olive oil. Once the oil is hot, add the artichokes to the pan. Be careful as they can cause splatter when they are added to the pan. Make sure to spread out the artichokes into a single layer and cover with a lid. Cook for about 4 minutes without touching the veggies. Once they have browned up, use a spatula to turn them over to cook and brown on the second side. You may need to adjust the temperature depending how quickly or slowly they are browning up. Lower the heat to low and add the garlic and salt and stir for 1 minute. Then zest the lemon into the pan and add 2 maybe 3 teaspoons of lemon juice. Stir and then add the feta cheese.
