Description: SUBSCRIBE HERE youtube.com/channel/UCGKAhUMPWsdLT1vb3hl1Dtg Homemade Shepherds pie recipe #comfortfood MY SOCIALS Instagram: instagram.com/jonny.photos Snapchat: itsjomejia Twitter: twitter.com/jonnymejia23 Facebook: facebook.com/KitchenWithJonny INGREDIENTS 3 tbsp oil for cooking 1/2 cup of diced carrots 1/2 cup of diced celery 1 medium onion, diced 3 cloves of garlic, minced 1-1/2 lb lean ground beef 1 tsp dried oregano 1/2 tsp dries thyme Salt and pepper, to taste 3 tbsp tomato paste 1 cup chicken stock 1/2 cup peas, thawed For mashed potatoes 2-1/2 lb potatoes, peeled and quartered 1 stick (8 tbsp) butter, softened 1/2 cup whole milk, warmed up Salt and pepper, to taste INSTRUCTIONS 1. Preheat oven to 400 F. Put a pot or a dutch oven over medium heat. Add the oil and allow to get hot, then add the carrots, onion, celery, and salt. Stir and cook until the vegetable softned a little, about 5 minutes. 2. Add garlic and cook for 30 seconds. Add ground meat, breaking it up with a spoon, add oregano, thyme, salt and pepper (I added 1 tsp salt) Cook until the meat has begun to brown, 5-7 minutes. 3. Add tomato paste and stir until is mixed with the meat. Add chicken stock and bring to a simmer, then reduce heat to low, cover and simmer for 10-15 minutes to allow it to thickens. 4. Stir and taste for seasoning. Stir in the peas and set aside until needed. For the potatoes 5. Place potatoes in large saucepan; add enough water to cover. Add salt, stir and bring to a boil. Reduce heat to medium-low, boil gently for 20-25 minutes or until potatoes break apart easily when pierced with fork. Drain well. 6. Return potatoes to saucepan; mash potatoes with potato masher until there’s no lumps. Add butter, milk, salt and pepper. Continue mashing to make potatoes smooth and creamy. You may add more milk to make them creamier. 7. Spread meat filling evenly into a baking dish. Top with the mashed potatoes, making sure to cover the meat mixture. Place the dish on a baking sheet so the drippings don’t dirty the oven, and bake for 25 minutes or until potatoes begin to brown.
