Description: cheek by Jowl... Pig Jowl removal, ready for a video. Im going to cure these wonderful jowls to make the gruesomly named, face bacon. Also known asJowl bacon, hogs head bacon and the more subtley named, Italian Guanciale. I love working on the cheeks/jowels but it don't arf take the edge of your knife but it's a small price to pay for a cracking product. I may save one and make the long forgotten Bath chaps, remember them? it really doesn't get any more old school than that. Nose to tail for days. #SRP #fifthquater
