Description: We make Nihari quite often but I never filmed the recipe because it takes way too long to prepare! This recipe is LEGIT follow as the directions say⬇️ and Insha'Allah it will turn out absolutely delicious! Tastes just like the #nihari I tried from Karachi though not as spicy!💛 (got the recipe from my dad) Facts about 'Nihari' - it's a Pakistani/Indian stew consisting of slow-cooked meat, mainly shank meat of beef or lamb, along with bone marrow (have you ever tried it?). It is flavoured with long pepper (pipli), a relative of black pepper. The gravy is thick, rich and goes really well with tandoori naan! It's usually prepared for special occasions! INGREDIENTS: For Nihari Spice Powder: Half nutmeg 3 tbsp fennel seeds (saunf) 1 star anise 3 pieces of mace (jalwatry) 1 tbsp black peppercorns or (pipli) long pepper 2 bay leaves 1 black cardamom (kala laachi) 1 tbsp coriander seeds (daniya) 5 green cardamom pods (laachi) 1 tbsp whole cumin seeds (zeera) 1 tbsp black cumin seeds (kala zeera) 2 tsp paprika powder for colour 2 tsp red chilli powder 2 tsp salt 3/4 tsp turmeric powder (haldi) Other Ingredients: 1 onion, finely chopped 1 -1/2 cup sunflower oil 2 kg beef shanks, 2 inch cubes 1.5l water + 1 glass (if necessary) 1 tsp salt (or to taste) ginger, finely sliced (for garnish) green chillies, sliced (for garnish) For Flour Mixture: 1 cup water or as needed 1/3 cup atta/wheat flour or plain flour (I used atta) Notes: if using a normal pot to prepare this double the pressure time. DIRECTIONS: In a spice grinder add all the nihari spices except red chilli powder, paprika powder, salt and turmeric powder. Grind well into a really fine powder (sieve if necessary you don't want big chunks of spices). Once blended add in 2 tsp salt, 2 tsp red chilli powder, 3/4 tsp turmeric powder and 2 tsp paprika powder (this will give a vibrant colour to your nihari so DO NOT skip). Mix well and set aside for later. In a pressure cooker heat up 1-1/2 cup sunflower oil (this might look too much but trust me on this) on medium heat.
