Description: Anyone in need of a last minute Thanksgiving side!?! Or just a really flavorful Fall salad? What you’ll need is a bunch of Brussel Sprouts, apples, fresh mint and tempeh bacon . I personally love the tempeh from Light Life! Start by cutting up your Brussel Sprouts either by dicing them, or grating them depending on your preference. Chop up your apple into tiny chunks, dice up your mint and then sauté your tempeh. I like to use an olive oil spray, once it’s cooked I put the pieces on a cutting board and dice them up. Mix the dressing ingredients and toss everything together. It’s a great combination of flavors and textures. For the Dressing: 1 Tbsp Fresh lemon juice or vinegar rice, white wine, apple cider, etc., 1 Tbsp Soy sauce, 1 Tbsp Whole grain mustard, 1 Tbsp Olive oil, to taste Black pepper/Salt, drop of stevia Recipe Instructions What you’ll need: 1 bag of brussel sprouts chopped 2-3 apples diced ½ cup mint leaves One package of smoke\y tempeh strips from Lightlife
