Description: Today I’m going to give you a few tips on keeping your knife sharp with the Dexter Russell Sani-Safe Diamond Sharpener. A diamond sharpening steel is a must-have for maintaining and sharpening your knives. It can be used as a steel when running your knife across it with a slight amount of pressure, or to create a new edge, you use more pressure. Another feature I like about this steel, or sharpener, is that it has an oval design instead of the round carbon steel design. I believe this puts a much better edge on your knife. In this video, I’ll show you couple ways on how to sharpen your knife using a diamond sharpener. In the first method, you are going to hold the knife and sharpener out in front of your body at a 45° angle. You want your knife to be at a 20° angle off of the sharpener. Place the heel of your blade at the very tip of the diamond sharpener, and then you're going to apply a little bit of pressure. Bring the knife all the way down. Next, you are going to do the other side. I recommend doing each side about 10 times or so. If you want to really sharpen it, put a lot more pressure on the knife. Speed comes with practice. If you aren’t comfortable holding the steel in front of you, you can set it on a counter and draw your knife down. This works just as well. The Dexter Russell Sani-Safe Diamond Sharpener is easy to clean. It also has a great grip and a guard that's going to stop you from cutting your fingers. You should always wash and dry your sharpener after every use using a damp cloth. This will remove any metal fragments that come off of your knife. I've used Dexter Russell products all through my career. They're great in both the commercial kitchen and in your home kitchen.
