Check out their new AirFlex+ jeans: on.ae.com/6006TsRRo #AEpartner #aejeans RECIPE Cake Batter: - 2 cups all-purpose flour - 2 tsp baking soda - 1/2 tsp salt - 2 tsp ground cinnamon - 3 large eggs - 2 cups sugar - 3/4 cups vegetable oil - 3/4 cups buttermilk - 2 tsp vanilla extract - 2 cups grated carrots - 1 (8 oz) can crushed pineapple, drained - 1 (3.5 oz) can sweetened flaked coconut - 1 cup chopped pecan or walnuts Steps: 1. Line 3 (9 inch) round cake pans with wax paper; lightly grease and flour wax paper. Set pans aside. 2. Stir together flour, baking soda, salt, and cinnamon. Beat together eggs, sugar, oil, and buttermilk at medium speed until smooth. Add flour mixture, beating at low speed until blended. Fold in carrots and next 3 ingredients. Pour batter into prepared pans. 3. Bake at 350 degrees for 25/30 minutes or until toothpick comes out clean. Remove from pans and spread cream cheese frosting (recipe below) between layers & top & sides of cake. 4. Eat dat cake!!!! Cream Cheese Frosting: - 3/4 cups butter (softened) - 1 and 1/2 packages cream cheese (11 oz total) (softened) - 3 cups sifted powdered sugar - 1 and 1/2 tsp vanilla extract Steps: Beat butter and cream cheese at medium speed until creamy. Add powered sugar and vanilla extract, beating until smooth.
