I used a variety of proteins and loaded them up with veggies for a balanced meal. I got the freshest produce from my local Ralph's / Kroger. Click this link to shop the ingredients: bit.ly/3JAVG4p Beef Curry Udon Recipe: 1/2 onion, chopped 3 cloves garlic, minced 1/2 lb shaved beef 1 cup sliced mushrooms, shitake 2 tsp soy sauce 3 cups beef bone broth 1/2 pack or 4 cubes of japanese curry block udon sliced onions In a pot, add olive oil and then saute the onions and garlic for a minute. Next, add the shaved beef and sliced shitake mushrooms and cook through. Season with a splash of soy sauce and let it cook for another minute. Remove in a bowl and set aside. Deglaze the pot with the bone broth and lift the brown bits at the bottom. Add more broth and the Japanese curry block. Let it come to a boil and then add the udon package to warm through. Season to taste. To serve, add udon and curry to a bowl, top with the shaved beef and mushrooms, and sliced onions. Butter Chicken Curry Recipe: 2 tsp Garam Masala 2 tsp garam masala 1 tsp Cumin 2 tsp curry powder 1/4 tsp oregano 1/4 tsp Cinnamon 1/2 tsp salt 1.5 lbs chicken thighs 1 Onion cut into chunks. 4 cloves Minced Garlic 1 1/2 tsp grated Ginger. 2 cups crushed tomatoes 3 tablespoons butter 1 cup coconut milk In a large pot, add olive oil, onion, garlic, ginger. Add the marinated chicken, cook for about 5 min on med-high heat. Add Crushed Tomatoes and let it continue, letting it get concentrated and caramelized. Stir and simmer 20 min on medium-low heat. Add butter and coconut milk. Simmer 5-10 more minutes to thicken. Serve over Basmati Rice and garnish with tomato-cucumber salad and Cilantro. Thai Shrimp Red Curry Recipe: 3 cloves garlic, minced 1 lb jumbo shrimp, peeled and de-veined 1/2 red bell pepper 2 cups asparagus 2 cups bok choy 1 cup coconut milk 1 tablespoon red curry paste 2 tablespoons water or broth 2 teaspoons fish sauce 1 teaspoon brown sugar In a large pan, drizzle some oil and add garlic. Next, add the shrimp and cook on each side for 1-2 minutes. Season with salt and pepper. Remove onto a plate and set aside. In the same pan, drizzle oil again and add the bell pepper and asparagus. Saute for 2-3 minutes and then add the red curry paste. Mix it up and pour in the coconut milk to blend. Season with some broth, fish sauce, and brown sugar. Let it come to a simmer and add the bok choy to wilt and the shrimp. Warm everything through for 5 minutes and serve with rice. Garnish with cilantro and squeeze of lime.
