Description: Zucchini Ricotta Lasagna. No pasta involved :-) A fun way to offer zucchini to your toddlers and a beautiful presentation for a family meal. The zucchini are filled with a mix of ricotta, almonds and eggs. Creamy and cheesy. The marinara sauce keeps everything together. INGREDIENTS: • 4 medium long zucchini • olive oil to drizzle • 1 cup ricotta • 2 medium eggs • 1/2 cup Parmesan cheese grated • 1/2 cup almond meal • few basil leaves • pinch of salt • 1 cup marinara sauce • 1/3 cup mozzarella Roast the zucchini in the oven to 400F for 15 min. Bake the lasagna to 400F for 20 min. Enjoy!
