Dinner - Enchiladas: 8 corn tortillas 1-2 packets of red enchilada sauce 1 can of black beans, rinsed Spices - cumin, paprika, mixed herbs, nutritional yeast, salt and pepper Spinach Lemon juice Vegan cheese, for topping Avocado, for topping - I baked them at 200 degrees Celsius for 20 minutes. Was really yum! Snack - Choc Maca Bites: 1 cup almond flour 1/4 cup cacao powder plus more if needed 1/4 cup rice malt syrup + 1-2 tbsp maple syrup depending on sweetness Salt, to taste 6 soft medjool dates, pitted 2-3 tsp maca powder Snack - Mini Pizzas: 1 packet of Simple Mills Almond Flour Pizza Dough 6 tbsp water 1 tbsp oil, optional 1 tbsp apple cider vinegar 1 tomato, sliced Vegan cheese 3 small mushrooms, sliced ENJOY!
