She did release this later in the US with imperial measurements but it's currently sold out at Barnes and Noble) bit.ly/3jDI2lM ✰The HealthNut Cookbook: rstyle.me/+By6xSx0mXZcLoimIlwTrBQ ✰ Nikole's YouTube Channel: youtube.com/user/HealthNutNutrition ✰ Roasted Poblano and Mushroom Fajitas Note: I have permission to share this recipe from the author Ingredients Kale + Cabbage Slaw 2 cups stemmed and shredded black kale 2 cups shredded red cabbage juice of 1/2 lemon 1.5 tsp agave or maple 1/4 tsp sea salt Veggie Filling 2 tbsp avocado oil 1 tbsp lemon juice 1.5 tsp gluten free tamari 1/2 tsp ground coriander 1/2 tsp sweet paprika 1/2 tsp garlic powder 1/4 tsp ground cumin 1/4 tsp sea salt 1/4 tsp black pepper 2 portobello mushrooms, sliced into strips 2 poblano peppers, seeded and sliced into strips 1/2 medium onion, sliced 1 tbsp finely diced red chili pepper (I omitted this when I made this recipe) Avocado Sauce 1 lg avocado 1/2 cup water 1/4 cup chopped fresh cilantro juice of 1/2 lemon 1 clove garlic salt and pepper For Serving 4-6 soft corn tortillas (I used corn + flour combo and it was great!) 1/4 cup vegan feta crumbles fresh cilantro Directions Preheat oven to 400 degrees. Make the slaw by combining the slaw ingredients in a large bowl and massaging to soften. Chill in the fridge until ready to use. Make the filling by mixing the avocado oil and spices in a large mixing bowl. Add the mushrooms, peppers, and onions and toss well to coat. Transfer to a lined baking tray and roast for 20 minutes, turning halfway through. In the last 5 minutes of roasting, wrap the tortillas in foil and place in the oven to warm through. Make the avocado sauce by combining all of the sauce ingredients in a food processor and blending until smooth. Assemble tacos by layering slaw, veggie filling, and avocado sauce onto each tortilla and top with vegan feta and fresh cilantro. So good, hope you enjoy!
