You can sign up for the challenge anytime: veganuary.com/try-vegan/?d=Lush #veganuary2022 Veg soup Ingredients 300g x 7 assorted vegetables peeled and chopped (including an onion) Cooking oil 600ml water 1 can of chopped tomatoes Herbs of choice (rosemary, sage, thyme, bay) Optional lentils or beans of choice Method Put the root veg on one side. Start with putting some cooking oil in the pot with an onion and the rest of the vegetables. Put a lid on, stirring occasionally, and leave it to sweat on low heat for about ten minutes. Now put in the prepared root veg plus 600 ml water and stir together. Add a can of chopped tomatoes and stir. Add seasoning and herbs and stir again. Bring to boil then turn down to simmer, with the lid on, for 20 minutes. Then remove the lid and stir again leaving it to continue cooking. Now is time to add any lentils, beans. When everything is soft, turn the heat off. Bread Ingredients 2 pounds of wholemeal flour 1 soup spoon of vegetable oil (sunflower) 1 sachet of dry yeast salt water Method Start by adding the flour to the mixing bowl along with the oil. Sprinkle the yeast and the salt, keeping them separate in the bowl. Now you can stir all of this together. Add water until the dough holds together - you don’t want it too mushy. Add a bit more flour so the dough doesn’t stick to your hands when kneading. Leave it to rest for about 1 hour and transfer to a tray. Pre-heat the oven and put the bread in for 1 hour. Enjoy!
