Description: theunbelievablealt.com Fajitas are one of my favourite recipes to cook for the family. It’s an easy recipe to scale up or down! Party food! Plus, you get to eat with your hands! Fun & delicious good time eating! I’m using @unbelievablealt beefless pieces in my recipe, I’m going meat free today! Make sure to head to @tescofood meat aisle to pick up a pack and share your fajita creations. You can easily cook this indoors or out. I love to be outside so we are gonna treat our grill like a stove. Set it up for indirect heat. Charcoal on one side only. The half and half technique. This way you can move the pan to keep the right heat. And that should be medium to medium hot. Get things sizzling! Recipe - serves 4 Ingredients 2 packs of The Unbelievable ALT. Tender Beefless Pieces 2 large onions sliced 2 bell peppers sliced 12 mushrooms sliced 12 medium sized tortillas Vegetable oil Seasoning mix 2 tsp sea salt 1 tsp cracked pepper 1 tsp onion granules 1 tsp garlic granules 1 tsp of cayenne or chilli powder (chipotle is my fav) 1 tsp of brown sugar Sometimes I’ll add a pinch of ground cumin and paprika for next level flavour. Pico de gallo 4-6 tomatoes diced Tbs of chopped coriander 1 red onion finely sliced 1 limed juiced Sour Cream See comments for method COMMENT STRAIGHT AWAY Method Mix all the ingredients for the seasoning in a bowl. I like to make large batches of the stuff. Season to taste. Combine the ingredients for the pico de gallo to have on standby for the final assembly. Place a large frying pan (cast iron works best) over coals. Let it get hot then drizzle some vegetable oil in the pan. I like to cook all the ingredients in the pan but you can cook things straight on the grill. If you want that pure BBQ flavour then it’s best to cut the onions, peppers, and mushrooms in half and grill, then slice after cooking. Place your onions, then peppers, and mushrooms in the pan. Sprinkle some of the seasoning mix on the veg. I try to keep the vegetables separate from each other in the pan, making sure they get a good sear. You want to soften them up. I usually give em 12-18 minutes, but it depends on your heat levels. Once they start to char and have that lovely golden-brown colour, add The Unbelievable ALT. Tender Beefless Pieces. Make sure you drizzle some more oil in the pan. And keep the pieces separated from the veggies. Place the pan half over the coals and the other half over the indirect heat. The veggies should be over the mellower heat. The hot side is for the Beefless pieces. These need about 8-10 minutes. Turn them a couple times so all the sides are nicely cooked. Quickly toast your tortillas on the grill. Or even better, lay the tortillas over the ingredients to soak up the heat and flavour. I also like to toast them directly in the pan for a proper soak and toast. Lay out your Tortillas, slather on some sour cream. Then build the wrap. Add all the ingredients but don’t overload. Top with some pico de gallo and your favourite hot sauce and bam! That’s a party in your mouth. #ad #unberlivablealt #bbq #wintergrilling
