Description: Ingredients 1 Box of cooked macaroni 2 to 3 cups of shredded chicken 8 Guajillo chiles 1/2 Onion 2 to 4 garlic cloves 1 Tbsp butter + 1 Tbsp AP Flour 1/2 cup panko crumbs + 1/4 Cup Cotija Cheese + 2 Tbsp melted butter 3 cups heavy whipping cream or Half & Half 1 1/2 Cup shredded Medium Cheddar 2 cups Shredded Oaxaca cheese or Mozzarella cheese 2 Tbsp tomato chicken bouillon 1 1/2 Tbsp Mexican oregano 1 cup Chicken broth Bake at 380 degrees (F) for 15 to 20 minutes Quick steps for reference 😊 Soak guajillo chiles in kettle hot water + garlic 10 mins Boil Macaroni as suggested on the box Sautee onion until soft Shred chicken Make a roux by using 1 Tbsp butter + 1 Tbsp AP Flour Add whipping cream + enchilada sauce In another pot combine macaroni+ onion+ shredded chicken Add creamy enchilada sauce and combine all ingredients Pour ingredients into a baking dish Bake and enjoy! Tip‼️ Have a lot of fun making this recipe Extra creamy Mac & Cheese use 4 cups whipping cream To prevent the topping from burning- Place it in the center baking rack and check after 10 minutes.
