Soak the green bananas, dasheen and coco to ensure it softens a bit before placing it in the fire. It soaks for 30 minutes. Place a pot on the fire with water. Add sea salt. Cut the skin off the green banana and cut the dasheen and cocos. Add the cut vegetables to the pot then add the green bananas last. 🇯🇲 CONGO ITAL STEW: Boil the gungo peas in a pot with water and sea salt. Add coconut milk to the pot. Chop up carrots, okra and Irish potato and add in the pot on the fire. Stir. Allow it to boil a bit, then add more coconut milk. 🇯🇲 STEAMED VEGETABLES WITH ACKEE: Clean and wash the ackee and leave it to soak for 5 minutes. In a bowl, Cut the callaloo, cabbage, Irish potatoes, tomatoes, peppers & scallion. Boil the ackee in a separate pot with water and sea salt. In another pot, pour coconut milk in the pot. Allow it to simmer for 15 minutes. Add the vegetables & coconut oil. Cover the pot and allow it to steam for 10-15 minutes. Add salt and stir.
