You could use any sausage that you like, any peppers or other veg that you like. Ingredients: 1 pound (500g) Italian sausage 2 Tbsp (30 mL) extra-virgin olive oil 1 large red onion, sliced 3 assorted bell peppers thinly sliced 1 bulb fennel trimmed and sliced 2 hot banana peppers, sliced Salt & Pepper to taste 3 cloves garlic, minced ½ tsp (2 mL) red pepper flakes Scoop of Peperoncini Piccanti 1 tsp (5 mL) oregano 30 mL (2 Tbsp) tomato paste ½ cup (125 mL) white wine Handful black olives Method: Slice the sausages into 1” lengths. Heat olive oil in a large pan over medium-high heat, toss in the sausage and brown all over. Remove the sausages, and add the onion to the pan and sauté until translucent. Toss in the peppers, fennel and garlic; cook & stir until they soften slightly. Add salt, pepper, oregano, red pepper flakes, Peperoncini Piccanti, and tomato paste; cook, stirring, 1 more minute. Stir in ½ cup wine; reduce heat to medium, cover and cook until the vegetables are tender- about 5 minutes. Add the sausages and cook through - another 3 to 4 minutes.
