Organic gold potatoes, rinsed and cut into halves, then into thirds ¼ cup fresh basil, rolled and chopped (done last) 1 - 2 tbsp. Fresh chives, chopped, use scissors for ease 1 parsnip, rinsed, peeled, cut into coins ½ thick 2 cloves garlic, minced ½ large red onion, cut into large chunks 1- 2 tbsp. Olive oil 1 lemon, zested, juiced 2- 3 tsp. Fresh rosemary, chopped fine 6 oz. burrata cheese, 2 tbsp Olive oil Parsley, chopped to garnish on top Salt and pepper Directions: Preheat oven to 450 degree F. Place the cut potatoes, onions and parsnip onto a parchment paper covered baking sheet. Add the minced garlic and then drizzle 1 - 2 tablespoons of olive oil over all. Use your hands to rub the oil into all the ingredients. Spread the veggies out into a single layer so that all the veggies are touching the bottom of the pan if possible. Bake in the middle of the oven for 45 - 50 minutes turning over the veggies at the halfway point. While they are cooking, tell a joke or two! Then in a small bowl combine the chopped rosemary, chives, olive oil, zest and juice from the lemon, salt and pepper and stir until combined. Set aside on the counter until ready to use. You know the potatoes are done when you notice the wonderful golden brown color. That’s what you are looking for and if you don’t see it yet, put the potatoes back in the oven until you do! Immediately pour the potatoes/onions onto a serving dish and drizzle the marinade over all the potatoes. Tear small pieces of the burrata cheese and place them all over the potatoes.
