Description: This is one of my favourite Thai inspired roasted chicken recipe. I usually marinate the chicken overnight and roast them the next day. Give it a go, and I'm sure you'll enjoy it too. Recipe 1 Whole Chicken, halved 1 Tbsp Fish Sauce 2 Tbsp Peanut Oil * Note: add the peanut oil and fish sauce into the Aromatic Spice paste. Aromatic Spice Paste 1/2 inch Galangal 1 Lemongrass 2 Clove Garlic 2 Med Sized Shallots 3 to 4 Thai Chili (Bird's Eye/Chili Padi) 8 Kaffir Lime Leaf 1 Small Cubed Palm Sugar (about 2 to 3 tsp) 1 tsp Black Peppercorns
