Description: This is a video demonstrating the use of a copper diffuser with cast iron. Copper diffusers are amazing because they help to get a really even temperature across the surface of cast iron. Copper diffusers should be used over no more than medium heat, otherwise, they turn a very dark charcoal color. They will still perform the same, but they just look different. Diffusers are not intended for high-temperature cooking. Copper diffusers work best with cast iron when there is direct contact. I also talk a little in this video about infrared thermometers. Often times when giving cooking instructions, people will say what temperature to heat a skillet over. Better results are obtained when you tell people to what temperature to heat a skillet.
