When I was creating my daughters First frozen birthday party I knew I wanted treats representing all the characters and when I was at Disneyland I saw the Olaf caramel apples. I thought - round isn't quite right for him and then as I was doing my grocery shopping I saw the pears and thought - that will be perfect! Check out my "Live Streamed Videos" playlist here youtube.com/playlist?list=PLrIzGV25YD__EboJRxNeHYowY136sOjsO Caramel Pear 8 pears 8 sticks 1 lbs caramel 10 oz white chocolate 2 oz orange fondant blue candy dye or a little blue chocolate 4 oz chocolate 16 candy eyes piping bag Melt some chocolate and pipe out branch shapes to add as olaf hair later. Start the caramel pears by washing all the pears, and drying them. Then sticking them with caramel apples sticks. (Be gentle so they don't split, if they do the caramel won't stick well, in fact it will keep oozing under the caramel and chocolate and cause problems later) Then melt about 8-10 oz of caramel - you can use the microwave or the best way is to actually melt the caramel in the oven - preheat your oven to 200 and heat the caramel in an oven safe pan until it reaches 170 degrees give your caramel a gentle stir, you don't want to mix air bubbles into it. dip your clean and dry pear into the caramel, use a spoon to help the caramel cover the pear if it doesn't dip completely. hold the pear above the caramel and let the excess drip off. Once the largest drips are gone scrap the bottom off with a spatula. Hold it upside down to let it set a bit, then place it on parchment paper and place in the refrigerator. Do this with all your pears and let them all cool. I let the pears sit however they wanted, since trying to get them all upright was a bit of a struggle. Roll out a bunch of fondant noses in your palm to create the carrot shape. I use some of the melted white chocolate to connect the noses to the pears. use the white to attache the premade chocolate branches to the top of olafs head. Then add some blue candy food dye or some blue chocolate to the leftover white and stir to create a light blue. Then I attached the candy eye’s with the light blue chocolate. Pipe the light blue chocolate on as olafs mouth and nose. Pipe melted chocolate on as eyebrows.
