Let panko brown for a couple mins until fragrant and toasted, remove from pan to prevent burning. Pasta (adapted from Thomas Keller's method. I promise, this pasta is unlike anything you've ever had. This method uses pasta water to not only cook the pasta but create a beautiful sauce that sticks to the pasta like a glaze. It's amazing and worth the additional time it takes to prepare.) 1 lb. fresh linguini 2 tsp pressed garlic 1/4 cup white wine (pinot gris/grigio is my fave) 3/4 cup whipping cream 1/4 cup fresh basil 1 tbsp butter 1/2 cup grated parmigiano reggiano Salt Instructions: Boil large pot of water, add in a few tbsps of salt (water should taste like the ocean), add in your pasta and boil for 1-2 mins. Transfer pasta to a large sauté pan over med-high heat. Add in 3 ladles of pasta water (*don't pour out your pasta water). Add wine and garlic. (The pasta absorbs the flavours added to it and develops an amazing glaze-like sauce). Add in heavy cream. Cook until cream is reduced and the noodles are al-dente. Stir in butter. Season to taste with salt. Stir in grated parm and ladle on some more pasta water, tear basil directing into pan (it prevents bruising and has more flavor than cutting it). Stir, serve, and top with panko. This pasta is amazing. Please try! Mussels: 1 - 1.5 pounds, mussels (de-bearded) 1 tbsp olive oil 3 small shallots, chopped 3 cloves pressed garlic 1/2 white wine 1/2 - 3/4 cup heavy whipping cream Salt Chopped parsley (garnish) *1/3 cup chopped sun dried tomatoes in olive oil (try to find julienned, whole sun dried tomatoes never seem to taste as good) Instructions: Add olive oil to a large pan with a lid over med-high heat, sauté shallots for 1-2 minutes until softened, add in sun dried tomatoes, cook for another 1-2 minutes. Add in garlic and cook for 30-60 seconds until fragrant, do not brown. Add in white wine, and heavy cream, season with salt. Reduce sauce until it is a “nappe” consistency (it’ll hold a line on the back of your spoon). Add in mussels, and cover with lid. Cook with lid on for 5-6 minutes or until the mussels have all opened. If some mussels do not open, don’t eat them. Top with parsley and serve with garlic toast. Garlic toast: Baguette, sliced Parmesan Garlic Olive oil Salt Instructions: Slice baguette and drizzle both sides with olive oil. Place on a HOT grill pan (for marks) or cast iron pan, add some weight to the slices to get nicer marks. After 2-3 minutes, turn bread and grill other side. Remove from heat, and rub a clove of garlic over one side of the bread (this tastes amazing). Grate some parm over the bread, season with salt, and serve alongside your mussels. These will impress anyone, promise!
