Nothing like them and your guests will tell you they are great and beg you to make them for some special occasion. These hearty little appetizers are a handful of goodness that eat like a meal. Meso's Famous Shrimp & Crab Stuffed Eggs 12 large eggs 8 oz. White Crab Claw Meat 8 oz. Shrimp ¼ Cup Chopped Spring Onion ¼ Cup Chopped Parsley Dash Cayenne (if desired) 2 tbsp. Sour Cream 2 tbsp. Sweet Pickle Relish 1 tsp. Yellow Mustard Start with 3 tbsp. Mayo (use more at the end if needed) 2 tsbp. Sour Cream 2 tbsp. Diced Pimientos 1 tsbp. Garlic Powder ½ tsp. Black Pepper Sprinkle Paprika for top Allow for some variation. Depending on how many eggs you use. Boil eggs in 1 ½ to 2 quarts of water with ¼ cup vinegar added for 15 minutes. Then pour water off eggs into sink. When all water is gone vigorously shake boiler, rattling the eggs against boiler and cracking the shells. Then fill boiler with cool water enough to cover eggs. These will be the easiest to peel eggs you have ever had. After peeling proceed to cut eggs in half and place whites on egg tray and yolks in a bowl. In the bowl with yolks place all other ingredients and with a stick blender or fork begin to mash all the yolks, mayo, mustard and other ingredients until smooth. At this point taste to check to see if flavor is to your liking. Sautee shrimp in butter slightly. Drain and chop shrimp then add to egg mixture. Drain crab meat and add to egg mixture (make sure crab meat is pre-cooked). Mix very well then fill zip lock back with egg yolk mixture. Cut 1 hole in corner and proceed to squeeze into egg whites until filled. Top with parsley flakes, paprika and place a shrimp atop the egg half if you desire. Serve and enjoy!
