Description: Meal prep with me. Shirts optional. I was testing my new camera while making some vegan freezer burritos, but decided to roll with it and here we are. But these burritos are so good, so easy, and you can quickly make lunch for weeks! These will be a new staple for sure. INGREDIENTS: - 1 cup cooked quinoa - 4 sweet potatoes, scrubbed and diced - 1 large sweet onion - 6 cloves garlic, minced - 1 can sweet corn, drained - 1 can black beans, drained and rinsed - 1 can diced tomatoes w/ green chiles - 1 can green chiles - 1 tbspish cumin - 3-5 tbsp salsa verde - salt and pepper - tortillas (or wrap of choice) INSTRUCTIONS (very loose): 1. Cook quinoa until fluffy and let cool. 2. Meanwhile, roast sweet potatoes until soft and caramelized. 3. Sautee onions with garlic until softened. Add in corn, black beans, tomatoes, and green chiles. Season with cumin, salt, and pepper. Spoon in a few large tablespoons of salsa verde. Let that all cook down and get to know each other until it's delicious to taste. 4. Let everything cool (just enough that you can manage folding the burritos up with your hands). 5. Spoon a layer of quinoa, sweet potatoes, and your corn and bean salsa mixture in tortilla shells and wrap them in foil. Place in freezer. Move to fridge the night before you want to eat them so that they can thaw out overnight and you will be so very happy you did! Thanks for watching! :D
