Yummy 🍋😋 SOCIAL MEDIA Instagram: instagram.com/jonny.photos Twitter: twitter.com/jonnymejia23 Snapchat: itsjomejia Facebook: facebook.com/KitchenWithJonny Make 16 Lemon bars INGREDIENTS 2 sticks of butter, softened 1/2 cup of white granulated sugar 1/2 tsp salt 1 tsp vanilla extract 2 cups all purpose flour Lemon filling 3 large eggs 1-1/4 cup white granulated sugar 2/3 cup freshly squeezed lemon juice (3 large juicy lemons) Zest of 2 lemons 1/2 cup all purpose flour Powder sugar INSTRUCTIONS 1. Preheat oven to 350 F. Line a 9x9 square pan with aluminum foil or parchment paper, set aside. 2. Using a hand-held mixer or a stand mixer, cream together the butter, sugar and vanilla extract until fluffy. Add flour and salt and mix until well combined. Pat the dough into the bottom of the prepared pan. Bake for 15 minutes. 3. In a bowl, whisk together eggs, sugar, lemon juice and lemon zest until well blended. Whisk in flour and mix until the flour is well incorporated. Pour this mixture into the shortbread, bake for 25 minutes. Remove from the oven and allow to cool completely at room temperature then place in the fridge for at least 1 hour. 4. When ready to serve, cut them into squares and sprinkle with powder sugar. They can be stored in the fridge.
