Description: Easy Instant No Soak No Grind No Soda Rice Flour Vadas - Easy Indian Evening Snack Recipe Ingredients: Rice Flour - 1 Cup Yogurt/ Dahi (Curd) - 1 Cup Water - 1 Cup Onion (finely chopped) - 1/2 Cup Ginger (grated) - 1 Tbsp Curry Leaves (chopped) - few Green Chillies (finely chopped) - 3 no Cumin Seeds - 1 tsp Cilantro/ Coriander Leaves (finely chopped) - handful Salt - to taste Oil - for deep Frying +extra for greasing while shaping For Chutney: Oil - 1 Tbsp Peanuts - 1/2 Cup Green Chillies (Slit) - 3 or to taste Roasted Chanadal (Putana/ Pappulu) - 1/4 Cup Dry Coconut (You may use fresh coconut ) - 1/4 Cup Cilantro/ Coriander Leaves (finely chopped) - 1/4 Cup Tamarind - 2 flakes Salt - to taste For Tempering: Oil - 1 Tbsp Mustard Seeds - 1/4 tsp Urid Dal - 1 tsp Curry Leaves - few Dry Red Chilli - 1 no Procedure: For vadas: 1)Take a non-stick pan. On a low flame, into this pan add rice flour, yogurt or dahi and equal quantity of water. 2)Mix everything until they combine. Increase the flame to medium and keep stirring continuously until the mixture comes out as a dough. 3)Turn off the flame completely.To this add grated ginger, cumin seeds, finely chopped green chillies, coriander leaves, curry leaves, salt to taste and combine well. Let the mixture cool completely. 4)Grease your palms and take small portion of the mixture and round the edges to a nice shape. Make a hole at the centre. Shape one batch of vadas as per the size of kadai. 5)When the oil is hot transfer the vadas into the oil. You need to fry on medium to medium high flame. Don't touch the vadas immediately after dropping into the oil. Flip them only when they firm up.Fry them until they turn golden brown on both the sides. You can also bake them in oven at 350 degrees Fahrenheit for about 20 min. For Chutney: 1)In a kadai add one spoon oil. After it heats up add peanuts and fry them. Then to this add green chillies and fry them until the skin gets blisters. Then add roasted channa dal, dessicated coconut or fresh coconut and tamarind . Give a quick stir. Add handful of coriander leaves, stir once and turn off the flame. 2)Let them cool. Transfer the contents into a blender jar and grind once. Now add salt to taste and enough water and make a fine paste. 3)For tempering the chutney add oil when it is hot, add mustard seeds, urad dal, dry red chilli, few curry leaves. When the dal turns red pour it piping hot on the chutney. Serve it with hot vadas.
