Description: Today I'm craving for some mi goreng Indomie :) but I want to have it for lunch instead of just a snack. So we're serving it with some fried spatchcock chicken and an egg! I hope you'll enjoy this once-in-a-while comfort food =P~ Let's get to it! Indomie, your favourite flavor Chicken, sliced into halves or quarters Salt & Pepper Potato flour 1 Egg Cucumber, julienned Red chilli, sliced Chives, chopped (for garnish) Start off by seasoning the chicken will with salt and pepper on both sides. Next, coat it with potato flour/starch and set aside. Heat some vegetable oil on medium. You can use some of the flour mixture to test the temperature. Once the oil's ready, start frying your chicken pieces. Careful not to over crowd the pan. Keep flipping the chicken every few minutes, 4-5 minutes each side. Depending on the size of your chicken, adjust the cooking time. For these spatchcock chickens, i flipped around 3 times. Feel free to poke a knife into the thickest part to check for doneness. Note that if you're using spatchcock or young chicken, the flesh will be pinker than your usual adult chicken; so to check for doneness, pay more attention to the muscle fibres and blood near the bones. If it's still tough to poke through or if there's still blood around the ends/joints of the bone, then continue cooking. Prepare your Indomie the way you normally would, then pair it with the fried chicken you just made. Serve with a fried egg on top (runny yolks are awesome to mix into the noodles!) and a side of sliced cucumber for some freshness :3 then sprinkle chilli and chives as much as you want.
