Description: ✓ We had the great pleasure of attending our cousin's wedding in Kadod Village (in Gujarat, India), but being foodies we could not resist visiting the wedding kitchen, where the real wedding action was happening, by action we of course mean cooking action... Stepping into these wedding kitchens feels like stepping into a Medieval or Ancient kitchen with large cauldrons of food bubbling away. The Cooks (Rasoi) & their team are very adaptable to the circumstances they have to cook in, i.e. if there's no gas they will start a wood fire to cook on, if there is no electric power they will bring a generator, if there is no light they will use lanterns, if there's no covered kitchen they will erect a marquee / tent, if there is not running tap water they can easily adapt to getting water from a well etc... (The Puri's are Vegan and made from Wheatflour, Oil, Water & Salt) even though they are deep fried they are not too oily, the chef told me that the "secret" to making them less oily is to have the temperature of oil the very high before frying the pooris'. ALOO (POTATO) MASALA CHIPS RECIPE: * Salt * Asafoetida * Turmeric * Chilli Powder * Cashew Nuts * Raisins * Cumin Seeds * Dry Desiccated Coconut * Khus Khus (Poppy Seeds) * Sesame Seeds * Crushed Peanuts * Sugar * Green Chilli * Ginger * Fresh Coriander * Lemon Juice Once the above Aloo Chips Masala is mixed together, it is shallow fried and is then added to pre-fried Potato Chips and is all mixed together and served. RATALU PURI (PURPLE YAM BHAJIA) BATTER RECIPE INGREDIENTS: * Peeled & sliced Purple Yam (Ratalu) * Besan (Chickpea Flour) * Salt * Asafoetida * White Chilli Powder mixed with Water * Water All of the above ingredients are mixed together to create a batter. The Ratalu slices are dipped in the batter, sprinkled with Coriander & Black Pepper Powder before being fried. The delicious traditional Gujarati Food seen being cooked / served was: LUNCH: * Poori (Deep Fried Flatbreads) * Khaman (Dhokla) (Savoury Sponge "Cake") topped with Sev * Cucumber * Aubergine Curry * Lapsi (Sweet Dish) * Plain Boiled Rice * Mori Tuver ni Dal (to go with rice) DINNER: * Carrot Pickle * Potato Bhajia * Aubergine Curry * Poori * Masala Chips * "All India" (Chevda / Bombay Mix) * Kadhi (Buttermilk gravy) * Rice * Ratalu Puri * Shrikhand (Hung Yogurt Sweet Dessert with Dry Fruit) All the recipes for all the foods here were of restaurant quality and were authentic and absolutely delicious, in particular the recipe for the Ratalu Puri was sublimely moreish. Whilst in India I had the good fortune to be invited to several weddings and where there's a wedding in India there will also be temporary "street food style" kitchens set up to cater for all the hungry guests; the difference is that the food served up is not street food as such but it will predominately be home cooked style food being served up.
