Description: NMSU ICAN and NMSU Chaves County Cooperative Extension Service present Whole Grain Macaroni and Cheese, with Amie Steen Whole Grain Macaroni and Cheese RECIPE Serving Size: 1 cup Total Servings: 7 Ingredients • 2 cups uncooked whole grain pasta (elbows or rotini) • 4 Tablespoons all-purpose white flour • 2⁄3 cup nonfat dry milk powder • 2 cups water • 2 cups American cheese, cut into pieces • ½ teaspoon black pepper • 1 can of peas, drained (optional) • 1 can of chicken, drained (optional) Directions 1. Cook whole grain elbow macaroni according to instructions on package. 2. Drain the cooked macaroni and return to pan. 3. Sprinkle flour into warm macaroni and stir thoroughly. 4. Mix nonfat dry milk powder with water. 5. Over medium heat, slowly stir in the prepared milk into the macaroni. 6. Add the cheese and pepper. 7. Stir over medium heat until the milk and cheese thicken into a creamy sauce- approximately 7-10 minutes. 8. Stir in drained vegetables and meat (if using), heat thoroughly. You can add a mixture of any vegetable to this recipe! Try adding carrots, broccoli, diced tomatoes, or green chili. Drain and rinse canned vegetables in a colander to remove excess sodium.
