Description: NMSU ICAN and NMSU Chaves County Cooperative Extension Service present Shepherd’s Pie, with Amie Steen. Shepherd’s Pie Serving Size: 1 ½ cups Total Servings: 6 INGREDIENTS • Add as many fresh or canned vegetables as you want! Some ideas are peas, corn, diced carrots, diced celery, and diced potatoes. • 2 cups water • ⅓ cup nonfat dry milk powder mixed with 1 cup water (or can use 1 cup liquid milk instead) • 2 cups dehydrated potato flakes • 1 can of beef stew • Seasonings- Garlic powder, pepper, oregano INSTRUCTIONS 1. Preheat oven to 350 degrees F. 2. If using fresh vegetables, simmer in a pot of water on the stove to soften. 3. To prepare mashed potatoes: a. Bring 2 cups water to a boil. b. Remove from heat and stir in prepared milk and potato flakes with a fork. 4. Drain vegetables. 5. Add beef stew and seasonings to the boiled vegetables, heat through on low heat. If sauce is too thin, add potato flakes to thicken sauce. 6. Pour vegetable and beef mixture into casserole dish. Top with prepared mashed potatoes. 7. Bake in oven at 350 for 15-20 minutes or until mashed potatoes are slightly browned and dish is heated through.
