Add the butter and rub in with your fingertips until you have a mixture resembling breadcrumbs. Add the sugar and give a good mix. In a separate bowl, beat an egg and golden syrup together. Add to the flour mix and mix well. Once into a dough wrap in cling film and leave to chill for at least 30 minutes. Pre heat oven to 190°C/375°F/Gas Mark 5 and line to baking trays. Roll the dough out on a lightly floured surface to a thickness of about 4mm/ 1/4 inch. Cut out shapes and place them slightly apart on your lined baking tray. Bake for around 8 minutes until golden brown. Leave too cool on a wire rack.
