Description: My recipe for an easy and delicious low carb Cheesy Cauliflower Soup! Easy to make and delicious! EN187's Cheesy Cauliflower Soup: 1lb Hot Italian Sausage 1 Cauliflower 1/2 Onion Minced 1 Tbsp Minced Garlic 2 cups spinach 1 Cup Heavy Cream 4 Cups Chicken Stock Salt, Pepper, Red Pepper Flakes 1 Cup Grated Cheese (I used a strong white cheddar for this) Directions: Cut Cauliflower in 1/2, Break up half into chunks, rice half in blender. Mince 1/2 Onion. Brown Sausage in pan, Add riced cauli, chunks, onion, garlic, salt, pepper and chicken stock and simmer until cauliflower is tender. Blend 1 cup heavy cream till thickened.
