Description: Drunken Noodles - (single recipe) SAUCE: 2-3 Tbsp of Sweet Soy Sauce (ABC is one brand that is popular) 1 Tbsp oyster sauce 1.5 Tbsp of fish sauce 1 Tbsp of white granulated sugar 1 tsp of Sriracha (This is optional of course) 1 tsp of minced garlic (This is not optional) 6-8 Thai Basil Leaves cut chiffonade style NOODLES: 3 Tbsp canola or peanut oil (peanut oil is the best in my opinion) 2-3 cloves of garlic, minced (again, not optional) 2 large eggs 1-2 serrano chiles, thinly sliced (leave out, put in, or make available for add-ins at the table) 8-10 large shrimp, peeled and deveined 1/2 medium white onion sliced 3-4 cups fresh rice noodles, separated! - You can find these at most grocery stores in the ethnic sections 1 cup of Thai basil leaves, loosely packed 1/2 cup of grape tomatoes, halved Step 1 - Make sauce by combining all the ingredients in a small bowl, and set aside. Step 2 - Prepare noodles in a large saute pan by heating the oil over med-high heat, and when it's hot (smoke starting to rise up) add the garlic and cook - stirring constantly until light brown (remember - this will happen fast). Step 3 - Immediately after the garlic releases its aromatics add the eggs and serrano chiles and cook stirring constantly until the eggs are barely scrambled and set - this will take less than 1 minute Step 4 - Add the shrimp and onion stirring and folding constantly until the shrimp turns pink - usually about 1 minute Step 5 - last step - - add the noodles, basil, tomatoes ( I also ad broccoli here that I've prepared ahead of time by blanching in boiling water for about 90 seconds to 2 minutes and then immediately plunging into an ice bath) and the sauce and toss everything together until everything gets coated and covered with sauce. Keep it all cooking for about 1 minute or so getting everything cooked and coated well. Serve the dish HOT You can keep leftovers for about a day or two but after that it just doesn't taste as well. The key to this recipe is in the prep. Get everything done and staged before you start at the stove. You will be shocked at how fast this all comes together.
