Description: If you like seafood curry, I would like to suggest that you consider trying out this great Curry Prawns. With lots of vegetables as well, it makes a fantastic one pot dish to go with steamed rice. Note that I like to pan fry the eggplants & prawns first before adding it to the curry; but, this is an option. Ingredients 800 g Large Prawns 3/4 tsp Mustard Seeds 1/4 tsp Fenugreek 200g Shallots, pounded 1/2 inch Ginger, pounded 3 Cloves Garlic, pounded 3 Green Chilies, pounded 2 Medium Eggplant, cut into smaller chunks 200 to 250 g Okra 2 Medium Size Tomatoes, diced 2 Green Chilies, halved and seeded 3 Slices (about 10 g) Ginger, finely julienned 2 Sprigs of Curry Leaves 30g Tamarind Pulp mix with 1 cup of Warm Water 1 Box Coconut Milk (500ml) 2 1/2 to 3 Cups of Water 1 Lime, juiced Curry Paste 1/2 tsp Aniseed Powder 4 Tbsp Coriander Powder 1 1/2 tsp Turmeric Powder 1 Tbsp Cumin Powder 3 to 4 Tbsp Chili Powder 1/2 tsp Black Pepper Room Temperature Water, adjust accordingly
