Traditionally Thai people use leftover "gaeng hung lay" which is a popular northern Thai curry, but in this recipe I share with you how you can get those flavours without having to have any leftovers! It's a quick and easy meal that can be modified to your heart's content. Use any kind of leftover curry as the sauce, change up the veggies and protein, what's important here is the glass noodles!
