LUH YUH GUYSSSSS THE RECIPE: Free range chicken (extra chicken if you’re looking to pig the F*** out pho a few days like me) or a whole chicken. (I’d suggest to get some extra drum sticks or chicken thighs for additional flavor) Chicken Handling: -salt scrub, pat dry -chop off feet, 2 scallions and gently place them back inside of her -parboil if you feel the need, but I found my broth resulted clear with just skimming it -once water is aggressively boiling, toss in the bird (reduce medium low, uncovered) -toss in full raw onion to chill out -1 table spoon DASISA Chicken Bouillon Powder (I would suggest trying 2) -1 table spoon Salt Aromatics Broil: -Broil 450 (ish) -shallots (or purple onions, even white if you feel that’s what you wanna do) -ginger Aromatics Toast: -medium -3 mins cinnamon, star anise, cardamon -add coriander to the mix for another 2-3mins Chick Check-in: -20/30mins medium low -poke a chopstick in the tit and if the liquid has no blood coming out, SHE READY -when cooked, take it out and cover w plastic wrap to keep MOIST Nudes: fresh is the best, Pick your toppings based on how lazy you are (I dare you to be extra like me): cilantro/culantro, thai basil green onions white onions serrano/thai chili/jalapino lime/kaffir lime leaves bean sprouts chicken skin/chicken lard (this is a serious game changer, you must try it!) Assemble and enjoy the BEST bowl of PHO GA you have ever had, in your very own home.
