Description: Making homemade plum jam while camping in the desert? For a grilled cheese sandwich? No problem! In this video I’ll show you how to make homemade plum jam while camping in Death Valley and then combine it with crumbled goat cheese to make a delicious, gourmet grilled cheese sandwich. It’s not as difficult as it might sound! And it sure beats tired, old hotdogs and burgers! ****Grilled Goat Cheese and Plum Jam Sandwich**** Makes 2 sandwiches INGREDIENTS: 4 slices sourdough bread 1 plum 4 ounces crumbled goat cheese 2 tablespoons butter 2 tablespoons sugar 1 shallot 2 tablespoons of water salt and pepper 1) Peel and mince the shallot until you have 1 tablespoon of minced shallot. 2) Remove the pit from the plum. Coarsely chop the plum. 3) In a small saucepan, add 2 tablespoons of water. Then add the minced shallot, coarsely chopped plum, and the 2 tablespoons of sugar. Season with salt and pepper to your liking. 4) Bring the ingredients in a saucepan to a boil. It won’t take long! Once boiling, reduce the heat to medium and let simmer for 4 to 6 minutes or until the plum pieces are softened and the mixture has thickened. Stir the pot every so often while it is simmering. Once the jam has thickened and the plum pieces have softened somewhat, remove from heat and pour it into a heatproof bowl and let it sit for at least two minutes. 5) Meanwhile, you can start making the sandwiches.Take your 4 ounces of crumbled goat cheese and put 2 ounces of goat cheese onto two slices each of the sourdough bread. 6) Carefully spoon the homemade plum jam on top of the goat cheese that’s on each sandwich. Place the remaining two slices of sourdough bread on top of each sandwich. 7) Melt 1 tablespoon of butter in your frying pan and then place both sandwiches into the frying pan and cook them for 2 to 3 minutes or until the bottom turns golden brown and crispy. Don’t have your heat too high or the bread will cook too quickly and the cheese won’t have a chance to melt! Once the bottoms are golden brown and crispy, flip the sandwiches. Cook for another 2 to 3 minutes or until the bottoms get golden brown and crispy. When you flip the sandwiches to cook the other side, add another tablespoon of butter to the skillet. Butter makes it better! 8) Remove sandwiches from the skillet. Cut sandwiches in half. Enjoy your Goat Cheese and Homemade Plum Jam Grilled Cheese Sandwiches!
