Previous Episodes: youtube.com/playlist?list=PLCx6rriBlJPxHNIMDbAp45-yiJEa6emAu Check out some of my other content here : VEGAN KETO PLAYLIST : bit.ly/2Hr1J0m Check out some of my other videos: Twin Post Partum Fitness Journey : bit.ly/2OJidzJ My Vegan Twin Pregnancy Playlist: bit.ly/2rVcTiT MEAL PREP videos: bit.ly/2BrJ38L - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - - RECIPES *Please refer to video for cooking directions* JACKFRUIT TACOS Ingredients used: 2 cans Jackfruit, drained/rinsed/shredded 1-2 Tbsp. cooking oil 1/2 sliced White Onion 1-2 cloves garlic, minced 1 pkg Taco Skillet Sauce OR Use Chipotle peppers in adobo sauce + seasonings (cumin, chili powder, paprika, s+p, veggie broth) Bake at 400 degrees, checking and flipping every 10 minutes for 30-45min until crispy Spanish Rice 1 tbsp oil (for cooking) 1/2 white onion, chopped 1/2 green bell pepper, chopped 1 "not chick'n" bouillon cube 1 can Fire Roasted Tomatoes with Garlic 1 cup Brown Rice, long grain (rinsed) 1 cup Vegetable Broth 1 can black beans (drained/rinsed) Bring to boil, reduce heat to low and simmer for 30-40 min. Let stand for 10 min Jalapeno Cornbread DRY 1 cup corn meal 1 cup all purpose flour 1 Tbsp baking powder 1/2 cup organic sugar 1/2 cup vegan cheddar (or use the one I did - mozzarella ) WET 2 Tbsp. Flax Seeds, ground 4 Tbsp. Water (let stand 3-5 min) 3/4 cup unswteened soy milk or other plant milk 1 tsp.
