The purpose is to show cooks of all levels that cooking from scratch is much easier than they may think. Coffee Cake Doughnuts Recipe Yield: Makes 6 doughnuts, but you can scale this recipe up as needed Ingredients: For the Streusel: 1/2 cup all-purpose flour 1/4 cup sugar ⅛ tsp salt 1/4 teaspoon ground cinnamon 4 tbsp unsalted butter, melted For the doughnuts: ¾ cup all purpose flour ⅓ cup sugar 1/4 tsp baking soda 1/4 tsp salt 1/3 cup grapeseed oil (can also use canola) 1/4 cup milk (I use Skim) 1 large egg 1 tsp vanilla extract For the glaze: ½ cup confectioner’s sugar 2 tsp water Directions: For the streusel, whisk to combine the flour, sugar, salt, and cinnamon. Stir in the butter with a fork, then refrigerate while you make the rest of the recipe. For the doughnuts, whisk to combine the flour, sugar, baking soda, and salt. Set aside. In another bowl, whisk to combine the grapeseed oil, milk, egg, and vanilla extract. Add this liquid to the dry ingredients and whisk until the two are combined. It’s okay if the batter is lumpy, as you don’t want to overstir. Evenly divide the batter into the six donut wells, which is about 2.5 tbsp per well. Bake for 15 minutes until a toothpick inserted into one of the donuts comes out clean. Flip the doughnuts out, then let them cool. Mix the glaze ingredients together, then drizzle on top of the cooled doughnuts. Enjoy!
