You can eat it with pasta, mashed potatoes, salad etc. You can also make chicken parm sandwiches MY SOCIALS Instagram: instagram.com/jonny.photos Snapchat: itsjomejia Twitter: twitter.com/jonnymejia23 Facebook: facebook.com/KitchenWithJonny INGREDIENTS For marinara sauce: 3 Tbsp olive oil 1 small onion, diced 3-4 garlic cloves, minced 1 (28 oz) can of crushed tomatoes 1/4 chili flakes, optional 1/2 tsp salt, or to taste 1/2 tsp sugar black pepper 6 basil leaves For the chicken: Oil for frying 1-1/2 to 2 lb chicken cutlets Salt and pepper, to taste 1/2 cup flour 2 eggs 1 cup of breadcrumbs, more as needed 1 tsp garlic powder 1 tsp onion powder Slices of provolone cheese Grated Parmesan cheese INSTRUCTIONS: 1. To make sauce, in a medium sauce pan over medium heat, add olive oil and let it get hot. Add onion and cook stirring occasionally for 3-5 minutes. Add garlic and cook for 30 second or so. 2. Add crushed tomatoes, rinse the can with a little water and add it to the pan. Stir and bring to a simmer. Add pepper flakes, salt , sugar and black pepper and stir. Cover and lower heat to low. Cook for 15-20 minutes. Stir in basil and add more seasonings if needed. 3. In a shallow bowl whisk eggs. In another shallow bowl add breadcrumbs, onion powder, garlic powder, salt and pepper and whisk. 4. Season chicken cutlets with salt and pepper. Coat them with flour. Dip each piece of chicken in the eggs then in the breadcrumbs, coat well and set aside on a plate. 5. Fried chicken cutlets over medium high until it crisps up, 2 minutes or so per side. Remove to a clean place. 6. Place the chicken in a baking dish or baking sheet. Add marinara sauce in each piece of chicken and spread. Add provolone cheese and parmesan cheese. Bake at 450 F for 15 minutes. Served hot.
