Description: It's SO easy to make homemade chicken salad sandwiches while camping in Death Valley! The addition of pistachio nuts and dried cranberries in this recipe is very delicious and is sure to make your next camping trip all that more enjoyable. Pretty sweet, eh? HOMEMADE CHICKEN SALAD SANDWICHES You will need: 4 cups of shredded, cooked chicken breast 3/4 cups mayonnaise 1/4 cup sour cream 1/2 cup dried cranberries 1/2 cup pistachio nuts, chopped 1/2 tablespoon sugar 1 teaspoon lemon juice Salt Pepper Sliced tomatoes Shredded lettuce Buns (I like using brioche buns because they have a sweet taste. Any bun or bread will suffice, however, although some are better choices than others). 1) Whisk the 1/4 cup sour cream and the 3/4 cup mayonnaise together in a medium bowl. 2) Add the 1/2 tablespoon sugar and the 1 teaspoon lemon juice. Mix well. 3) Add in the 4 cups of shredded, cooked chicken breast. Mix well. 4) Add in the 1/2 cup of pistachio nuts and the 1/2 cup dried cranberries. Add in salt and pepper, to taste. Mix very well. (HINT: If you are not planning on serving and eating the chicken salad right away, you might want to wait and add the pistachio nuts right before you do serve it or eat it.
