Sous Vide (Soo Veed) If you’re someone who’s knee deep in the ins and outs of the culinary world in order to be front and center when the next big trend pops up then you’ve heard of the return of sous vide. What exactly is “sous vide?” It is a term that comes to us all the way from France meaning “under vacuum.” This cooking method requires you to seal whatever it is you’re cooking and its adjoining ingredients in a plastic bag and drop it into hot water for several hours. Because the water is kept lower than its boiling point of 212 degrees Fahrenheit or 100 degrees Celsius, the food doesn’t technically boil since it never touches the water. Instead, it cooks more uniformly. 5. Moringa Powder Move over matcha, there’s a new green powder that managed to swipe the attention of consumers back in 2017 and its name is moringa. Derived from the moringa tree, moringa powder densely packed with vitamins and nutrients with just one tablespoon of the stuff equalling a full serving of vegetables. It’s perfect for individuals who don’t get their proteins from animal products and is chalk full of calcium and iron, with the latter providing 50 percent of your daily needs. Not only that, but moringa powder is infused with inflammatory and detoxifying abilities. It looks like kale might finally be getting overthrown as this being hailed as the “next superfood.” 4. Plant-Based Meat With each passing year, more and more consumers are changing gears and switching over to a purely plant-based diet. This if forcing restaurants and other food dining establishments to recognize that not everyone eats meat. Grocery stores have even seen a spike in plant-based products like fake meats and fake cheeses. Several restaurants are now selling fake meat that looks looks, tastes, and even “bleeds.” This “bleeding” is thanks to a molecule called heme that is found in blood and gives meat its special taste. The company Impossible has managed to extract heme from the roots of nitrogen-fixing plants and used it to make their fake meat as good as the real thing. Similarly, the company Beyond meat uses beet juice instead of heme. 3. Rainbow Everything This trend managed to takeover everyone’s Instagram feed last year and you couldn’t log on to social media without coming across some new food variation of it. The trend can be traced back to its early days when Starbucks released their limited edition Unicorn frappuccino back on April 19th. Apparently, the pretty pinks and beautiful blues found inside the drink was enough to inspire a new food wave of brightly-colored foods. What ensued were aesthetically appealing pictures of rainbow everything. This wasn’t just limited to drinks as it crossed over to rainbow grilled cheese, rainbow burgers, and rainbow bagels of all things. Most people were mesmerized by these new creations, while others weren’t so much onboard and voiced their general disgust. 2. Goth Food Trend After a good amount of time had passed, the rainbow food trend began to slow down and people grew tired of seeing the same concept applied to different foods. And thus, the goth food trend was born out of a necessity to scale back such bright technicolor infused foods. It all started when the world was introduced to goth ice cream made by the Little Damage shop located in Los Angeles, California. The black color comes from using activated charcoal and for those of you that are curious about the flavor, its name is almond charcoal. The trend also crossed over into more savory foods like burgers, bagels, and hotdogs by using squid ink to achieve said hue. 1. Sushi Everything 2017 seemed to be the year that chefs decided to push the boundaries of your everyday average sushi. What started out as a mashup of a burrito and a sushi roll, now dubbed a sushirrito, ended up birthing a widespread trend that would go on to take on a life of its own. It seems that the masses weren’t just content with a sushi burrito hybrid as chefs have now started transforming your other favorite foods by giving them a sushi twist. For example, sushi burgers burst big into the limelight which is made up of two rice patties mimicking the appearance of buns and your standard sushi fillings make up the insides. It doesn’t stop there as sushi cakes, fruity sushi, and even sushi sandwiches have all been concocted.
