Description: I always get this really nice chipotle bacon & egg sandwich from one of my favorite cafes, but I don't know quite how to make a good chipotle sauce yet hehe. However, if I mix sriracha and mayonnaise, it kinda tastes the same! So tonight we're doing my take on a really nice and heavy midnight snack :) It should be really good! Let's get to it! Sourdough bread (your favorite kind, or any other crusty loaf) Bacon (even streaky bacon will work!) 1 Egg Sriracha Mayonnaise Cracked black pepper Melty cheese (your favorite kind) Butter Slice the bread into your choice thickness, then lather some butter on one side (or both sides!) and grill it on a pan on medium-low heat (this takes longer but makes the bread crunchy throughout). In the same pan, start pan frying your bacon. Flip the bread slices once the bottom has browned enough to your liking. Mix some sriracha with your choice of mayonnaise, add in some cracked black pepper, and then smear it all onto your bread. Taste as you go and adjust the sriracha-mayo ratio to your liking :) Shave some cheese and top it onto one of your bread slices. The cooked bacon goes on top of either bread slices. Pan fry an egg to your liking (I like mine still runny), and then sneak it into your sandwich. Put everything together, and you're done! :) I hope you get to try this one as well! Enjoy!! :)
