Description: I didn't use a recipe for this... I took the lazy route and used cake box mixes and pre-made icing powder, along with the mini round baking pans available in my pantry. I am shocked this worked as well as it did, lol. Step 1: prepare cake batter -I used the Aldi vanilla cake box mix (2 boxes) -I veganized these with Orgran egg replacer, soy milk and Nuttelex vegan butter Step 2: colour your cake batter -Divide your prepared/mixed cake batter into six portions (I used ¾ cup of batter for each portion, based on my using 10cm diameter mini spring form pans to bake the cakes in) -Use food colouring to colour each portion with your chosen rainbow colours. (I went traditional: red, orange, yellow, green, blue, purple) -Transfer each portion to its own greased baking pan Step 3: bake your cakes -Bake your individual cake portions. (I only had three mini cake pans so I had to do this in two batches.) -If you are using mini pans, keep an eye on the cooking time. You probably won't need as long as recommended on the packaging of the cake box mix Step 4: cool cakes and prepare icing -Once cakes are cooked, remove from oven and let them fully cool before icing -Prepare icing -I used 1 x packet of the CSR brand Vanilla Buttercream Icing Mix which I veganized with Nuttelex vegan butter Step 5: Ice the cake -Remove your cakes from their baking pans and cut/trim if needed. You need each layer to be flat so that you can stack them neatly. All my cakes rose so I had to slice the top parts off – much like removing the muffin top from a muffin -Once you have the cake layers ready, start stacking them by including a layer of icing between each colour. Then ice the entire top and sides of the cake so that it is completely covered in icing. -NOTE: if you are in a hot climate make sure your icing is chilled before you start working with it. Also, consider doing the icing process in stages so you can alternate between cooling any icing work you've already done in the fridge and completing the process. -Serve once icing is fully chilled/set!
