Description: Apple Carrot Oat Muffins - GF Crumbly, not too sweet. A great idea for an energetic snack after sports or breakfast or a treat for mom with the morning coffee. 😜 I'm already at my second bite. INGREDIENTS: 2 cups gluten free flour 1 1/2 cup rolled oats 2 tsp cinnamon 1 tsp baking soda 1/2 tsp salt 1/2 cup walnuts (optional but recommended) 1/2 cup sugar (maple syrup works too) 3 medium eggs 6 Tbsp butter, melted 1 cup grated apples (Fujii) 1 cup grated carrots Bake to 350F for 25 min and enjoy! Store them on the countertop in an airtight container. If you store them in the open air they will get harder (my hubby loves it).
