Thank you for watching! 💫 And don’t forget to subscribe here: goo.gl/mQwVjN **************************************************************************** Recipe : 3 Holi Recipes Kanji Vada Preparation Time: 30 minutes + 1 Day Cooking Time: 20 minutes Serves: 3-4 Ingredients: 1 cup Urad Dal ¼ cup mustard seeds 1 tbsp Black Salt ½ tsp Red Chili Powder ½ tsp Salt 1 tbsp chopped green chilies 1 tbsp chopped ginger Oil to fry Method: Grind the mustard seeds to a fine powder. Add salt, red chili powder, 4 cups water to the mustard seeds in a glass container. Cover and set aside in the sunlight to ferment for a day. Meanwhile soak the dal in water for 4-5 hours. Grind to a fine paste with a little water and the chopped chilies and ginger. Heat at least 3” oil in a pan. Make lemon sized balls of the batter and fry in medium hot oil till golden. Add fried vadas to the fermented kanji and chill to serve. Methi Mathri Preparation Time: 30 minutes Cooking Time: 20 minutes Serves: 3-4 Ingredients: 2 cups Flour ¼ cup melted Ghee 1 tsp Salt ¼ tsp Carom Seeds 2 tbsp Kasuri Methi Oil to Fry Method: Add the melted ghee to the flour and rub well till it resembles bread crumbs. Add the salt, carom seeds and the Kasuri Methi. Add a little water at a time to knead to a stiff yet smooth dough. Break into small balls and flatten on your palm. Heat at least 3” oil in a pan and fry the mathri in medium hot oil till golden. Remove and allow to cool down completely. Store in an airtight container. Kesar Thandai Preparation Time: 30 minutes Serves: 3-4 Ingredients: ¼ cup Almonds ¼ cup Pistachios ¼ cup Cashew Nuts 2 tbsp Poppy Seeds 2 tbsp Melon seeds 2 tbsp dry Rose Petals ¼ cup Fennel Seeds 1 tsp White Pepper Powder 1 tsp Rose Water ½ cup Sugar 1 tsp Saffron Method: Grind together all ingredients to a fine powder and store in an airtight container refrigerated. To make Thandai, add 2 tbsp thandai powder, milk and sugar to taste.
