In a jug combine warmed milk and yeast, mix and let it foam up for 5-10 minutes. 2. In the bowl of your stand mixer fitted with a hook attachment, add mashed potatoes, egg yolks, melted butter and milk mixture when ready. 3. Add flour, sugar and salt. Mix on low speed until it forms a dough. Increase the speed to medium high and let it knead for 5-7 minutes. 4. Form the dough into a ball, place it on a oiled bowl, brush the top with oil too. Cover with plastic wrap or aluminum foil. Place the dough somewhere warm, for 1 hr and 30 minutes to 2 hrs or until it has risen. 5. Once the dough has risen, place it on your work surface, cut the dough into 12 equal pieces or 16 if you want smaller buns. Form each piece of dough into a round ball. Place them in a 13x9 inch baking dish that’s been greased. 6. Preheat oven to 375 degrees F. Cover the rolls and allow to rise again for 45 minutes to 1 hr, really depends on how hot the environment is. 7. Bake them for 20 minutes or until golden brown on top. Brush them with melted butter. Allow to cool before serving.
